Ham Mayonnaise

Ham Mayonnaise

(serves four for lunch with crackers or bread)

1 lb chunk cold roasted ham

handful capers (rinsed if stored in salt), minced

handful cornichons or any gherkins, minced

1 red onion, minced

juice of 1/2 lemon

3 tbsps mayonnaise

plenty fresh black pepper

handful chives, minced

Simply put all the ingredients except the mayonnaise and pepper into a food processor and pulse until the consistency of minced meat.  Stir in the mayonnaise and pepper, sprinkle with chives, and serve piled on lettuce leaves.
