Olive and Anchovy Dressing

Olive and Anchovy Dressing

(makes LOTS)

1 cup green pitted olives

4 anchovy fillets in olive oil

1/4 cup pine nuts

1 tbsp capers, rinsed if stored in salt

zest and juice of 1 lemon

1-2 cloves garlic (depending on how much you love it!)

2 large handfuls flat-leaf parsley

2 tbsps mayonnaise

enough olive oil to achieve the consistency you like: perhaps 1/2 cup

Put everything in a food processor and blend steadily until emulsified.
