Yel­lowfin Tartare

Yel­lowfin Tuna Tartare

(serves 4)

12 ounces/340g fresh sushi-grade yel­lowfin tuna, diced small

3 spring onions, minced

hand­ful cucum­ber, seeds removed, diced small

zest and juice of 1 lemon

sprin­kle chili flakes

1 tbsp Japan­ese mirin (rice wine vinegar)

1 tbsp mayonnaise

Sim­ply mix every­thing togeth­er and chill thor­ough­ly.  Per­fect with sour­dough toast.
